What wine to serve with pasta?

Food and wine pairing is of particular importance in France and if all gourmets have a strong opinion of the great recipes of French gastronomy, what about pasta?

Spaghetti, lasagna, cappelletti, tagliatelle, orecchiette, tortellini, coquillette … Which wine to accompany them with?

The answers are as varied as the sauces with which we can accommodate them …

Indeed, if the shapes determine the cooking time, it is indeed the sauce used that guides the choice of wine for a happy marriage.

Here are some perfectly subjective tips.

For the carbonara: we recommend an Alsace pinot blanc, Chablis, Reuilly, Mâcon.

For the bolognese: a red wine will be appreciated, such as a Cabernet franc from Loire: Saumur, Chinon or Saint-Nicolas de Bourgueil.

For the tomato sauce: choose fruity and slightly tannic reds, a nice Côtes-du-Rhône or a few fruity Italian red wines including Chiantis.

For the cheese sauce: Chardonnays from Jura are a good match, as are whites from Savoie, as well as Burgundy wines such as Meursault. The slightly fatty side of these wines will go perfectly with the smoothness of your cream.

For the sauce with various vegetables (tomato, zucchini, or eggplant for example): it is recommended to choose a young red wine with little tannin, such as a young wine from Beaujolais or a young Pinot Noir from Burgundy.
