Tomato gnocchi, mint-basil oil

Ingredients for 4 persons

  • 1 shallot
  • 600 g tomatoes (ripe)
  • Olive oil
  • 1 pinch of Provence herbs
  • 1⁄2 vegetable stock cube
  • 1 clove of garlic
  • 1 bunch of basil (fresh)
  • Mint leaves
  • Juice of 1/2 lemon
  • 1 pinch of chili powder
  • 400 g gnocchi (fresh)
  • Parmesan shavings
  • Salt and pepper

Peel and chop the shallot. Cut the tomatoes into cubes. In a saucepan, heat a drizzle of olive oil and sauté the shallot until tender. Add the tomatoes, Provence herbs, half a bouillon cube and 10 cl of water, simmer for 20 minutes over low heat. Mix well, salt and pepper.

Peel and squeeze the garlic. In a food processor, mix it finely with the basil, mint, lemon juice, chili, a pinch of salt and 5 tbsp of olive oil.

Mix the gnocchi with the tomato sauce and cook for 6 min. Serve with parmesan shavings and herb oil.
